I'm going to a potluck...
On Thursday I'll be going to a potluck (it's the first meeting of Women's Issues Network - a school organization - for the year). I always have a hard time with things like this, but potlucks are better/easier than going out to restaurants for me.
There will be plenty of vegetarian stuff - actually I think it'll all be vegetarian. But not vegan. What I bring will likely be all that I can eat, unless there's fresh fruit and veggies. I'll definitely need to bring something I'm comfortable with, but also what other people would like too. I want to impress, but I can't be too "creative" or try something risky (cuz I might just set the house on fire, or something0.
I was thinking about either pita and hummus (maybe homemade..?) or some sort of grain and/or bean salad. Any other simple suggestions? And any SUPER hummus recipes (every time I make homemade, it's just icky) or great grain salads? I'm going to look through my cookbooks, but if you guys have any ideas, that would be great.
I'm even considering a dessert - maybe cupcakes - but I don't want to get overwhelmed or put too much pressure on myself.

I just made a pasta salad, it had tri-flavored rotini pasta, marinated artichoke hearts, chickpeas, kidney beans, spicy geardinaria blend of marinated veggies and marinated mushrooms! I made two gallons of the stuff for around $10.
All I did was mix all non pasta stuff, including their liquids/marinades, together 4 days before (I've done it day of, but the longer the flavors have to "mingle" the better), add good seasoning's Italian dressing blend to it, and just shake everything up! The day before, I cooked the pasta to the point of ALMOST being done, then I rinse it in cold water to stop the cooking process and add it to the other ingredients and stir. The next day, the noodles have soaked up the remaining marinade and everything is delicious!!

Thanks! I think I'll just make tabouleh. We can kill this thread if nobody has anymore suggestions.
I mentioned this in another post, but the hummus recipe I love is at www.dedemed.com.
There's even a video, also on YouTube, to show you how to do it right. I thinned it with a couple tablespoons of water as she suggested to get it at just the right texture and it was fabulous.
My dinner guest loved it so much he left me with none. :(
One more thing I forgot to mention, if you make this hummus, best to make it the day before so that the ingredients are fully absorbed on the day of the event and it's even more flavorful.

Went to a French-toast brunch the other day and took scrambled tofu. Only one person ate any... :( but what other savory make-ahead things could one take? (I thought about oven-fries, but I wanted protein for myself.)

I leave the tofu and veggie burgers at home for potlucks. Too many people seem to get weirded out by the mention of "tofu" and "vegan."
Some good already vegan dishes, pasta salad, black bean and corn salad, chili beans, lentil salad, tostadas, bruschetta, spinach salad w/strawberries and pecans.
Chocolate chip cookies are always a winner too.

you could do the biscuits and gravy and just reheat the gravy there and assemble. or do the potatoes with added veggies and marinated tofu chunks. thats a bummer that only one person tried your scramble. i know how you feel, i took a quinoa salad to a party and alot of ppl wouldnt try it cus they didnt recognize it. (i had figured even an unrecognizable grain wouldnt be that scary) although lots did try it and asked me about it, my aunt even asked for the recipe :)
Check out my blog - www.fanaticflavors.com - I would recommend my brown rice salad, or even the thick hearty cauliflower soup with crusty bread if you can bring it in a Crock pot to keep it warm!
Yeah, well this was a 9:30 brunch (breakfast, really), so I didn't want to get too lunch-y. I don't like meat analogs (and they're strictly kosher, so I didn't even want fake sausage/bacon or anything). Maybe next time I'll just eat some protein at home and take some vegan bread type thing (biscuits and gravy sounds great!) and supplement with fruit salad.
:( I *never* have problems at potlucks-- everyone always raves over my dishes-- so this was especially disappointing to me.
