Here's my recipe. Canned pumpkin is a disaster in it though:
Pumpkin Muffins
¼ cup vegan margarine
½ cup agave nectar or brown sugar
2 egg replacers
1tsp cinnamon
2 ½ cups Self Raising flour (or add 2tsp of baking powder to regular flour – I always use whole wheat flour)
½ cup soy milk
1-1½ cup pumpkin puree (Just cover pumpkin in a saucepan with water and cook until tender and water soaked into puree, drain any extra water) Canned pumpkin puree is HORRIBLE in this recipe. Avoid it!
1. Preheat oven to 375°.
2. Blend the margarine, nectar/sugar in a bowl with handheld beater, then add egg replacer and cinnamon.
3. Fold in the pumpkin puree and soymilk.
4. Then fold the flour into the wet mixture with a spatula and place into prepared muffin tins - just coat tins with cooking spray.
5. Bake for approximately 40 minutes.
6. Top with a sprinkling of brown sugar.
Servings: 6 large muffins or 12 small muffins
frost them with chocolate frosting or maybe a lemon one or vanilla or maybe a cream cheese one.
