Monday Dinner

What's everyone having for dinner tonight? I'm bored at work and was just wondering. It's been rainy all day here so I'm looking forward to the chilli I threw in the crockpot this morning. I just hope its ok because I didn't really have the usual chilli ingredients. It's kindof like the emergency cooking we talked about before. I used smart ground, a can of black beans, leftover spaghetti sauce, dried onion soup mix, some taco seasoning, and chilli powder- haha I hope its good!
I've been thinking the same thing... it's chilly and rainy, so I feel like having soup. I doubt I'll have time to make any, but I have some cans, dried soup, tetra packs etc in the cupboard. that should suffice. maybe with toast and/or a salad?
I was going to have soup for lunch, but the one my mom had stored in her office (we work in the same building), which I planned to consume, had cream in it! ARG. I was really looking forward to yummy carrot and coriander warmth. oh well.
beans and rice with homemade seitan. MmMm I just hope I remember to put the brown rice on fifty minutes ahead of when it's time to eat. I haven't decided what beans to use or how to flavor them, though. Taking suggestions on that, if anyone wants to have a go.
I'm going to add to the "carrot spaghetti" recipe on here, and make zucchini and carrot spaghetti, with mushrooms and cherry tomatoes. With homemade 7-grain bread. mmmhmmm.
It always seems like everyone else is having a better or more interesting dinner than me!!!

I got up early and made a massive pot of refried beans before it got too hot to cook. They're done now, and I have some leftover rice... so I think i'm gonna have bean and rice burritos with fresh salsa. Yum!

do you buy un-refridgerated soymilk? or drinking boxes? those come in tetra packs - it's just a way to package foods so they can sit on a shelf.
I'm making chili and cornbread for tonight. I'm also going to make some no bake cookies to snack on tonight with coffee while we watch a good movie. :)
Tofu, how do you make carrot spaghetti?
I just use a vegetable peeler and peel the veggies into thin, long strips. At first, it seems labor intensive, but once you get the hang of it, it's pretty easy - especially softer veggies like squash and zucchini.

all of those sound so yummy! it's like a soup, chili, and stirfry type day! i don't think i'm gonna eat anything tonight. just sip on some tea :)

My SIL is in town and has traditionally cooked when she visits, but I've been showing off my veganism this weekend instead. She *hearted* the lentil glop I made last night (not quite a loaf, I `submitted the recipe as my first ever today), and joked that I turned her poop vegan ::)
Anyway, she's making dinner tonight, and I think it's going to be pasta pesto primavera 'cause she knows I have a thing for alliteration. We'll see!

And I'm going to be finishing off the little bits of other things like noodles, rice, etc that I have so I can try to go raw tomorrow.
I made raw couscous, two different walnut meats for raw tacos, and I'm going to make a frisee salad with orange/ginger dressing tomorrow.
YAY RAW.
But really, chili sounds good...
