Monday Dinner

What's everyone having for dinner tonight? I'm bored at work and was just wondering. It's been rainy all day here so I'm looking forward to the chilli I threw in the crockpot this morning. I just hope its ok because I didn't really have the usual chilli ingredients. It's kindof like the emergency cooking we talked about before. I used smart ground, a can of black beans, leftover spaghetti sauce, dried onion soup mix, some taco seasoning, and chilli powder- haha I hope its good!
I have been flying all day so I came home craving something quick and easy. Plus I've been wanting to try Dal for a while. So... ta da.. Quick and Easy Dal http://vegweb.com/index.php?topic=4786

The mint-chip-kale soy ice cream I concocted was freakin' amazing! I think I'll post the recipe. Mint chip used to be my favorite as a kid. But I've been less than impressed with the commercially manufactured mint chip soy ice cream -- it's white and tastes chalky. Don't they know that mint chip is supposed to be GREEN?!?!
Anyway, just wanted to share my accomplishment:
I was lazy tonight and went out for dinner, vegan burritos and tofu fries! Yummy!

Okay, I submitted it to VegWeb but it may take a while for it to actually post. So for all of you mint chip lovers who also enjoy your leafy greens (although I can't taste the kale in this recipe, I know I'm getting some good stuff!), here it is:
4 or 5 cups of fresh Kale
1 cup vanilla soymilk
1 block of silken firm tofu
1/2 cup sugar
1 teaspoon mint extract
1/4 cup mild flavored oil (vegetable is fine; flax oil would probably work too)
1/2 cup vegan chocolate chips
Mint chip was my favorite ice cream as a kid and I have been so disappointed with commercially manufactured vegan mint chip so I created my own. The kale turns it a beautiful green and the end result is so good and creamy!!
1. Rinse kale leaves and squeeze dry. Tear them into bite sized chunks and put into blender.
2. Pour soymilk into blender and blend the mixture until smooth and green.
3. Add tofu and sugar to mixture in blender then blend until smooth.
4. Add mint extract and oil then again blend until smooth.
5. **THIS STEP IS IMPORTANT** Taste your mixture and add additional sugar and/or mint in small increments to suit your taste. (I found that the above listed measurements were perfect but some may like it sweeter or minty-er). Then blend again.
6. Chill mixture until you're ready to freeze it.
7. Pour mixture into your ice cream maker and make ice cream via your machines instructions.
8. Add chocolate chips when the mixture is about slushie consistency. (I use a bowl that's stored in the freezer and added choc chips about 10 minutes into mixing process)
9. When it's the desired consistency, scoop into a bowl and enjoy!!
Hey Meggs! I made this for dinner last night also and we enjoyed it so much there were only enough leftovers for one person :'( sooo I made it again today! Yay! I seriously cannot stop eating this :P
wow!! Everyone is so creative!! My chilli actually turned out really really good. It was a very pleasent surprise! then I had an orange sorbetto for dessert. No wI'm definetly goign to the store today so I'll have to think of something good tonight.

It's really good, isn't it?! I put tons of crushed red pepper and curry paste which made it super hot and yummy!!
I also ate all of it, I only have rice left... ;D
