Applesauce Walnut Bread/Cake
1 cup vegetable shortening
1/2 cup sugar (I recommend using full amount)
2 1/2 cups hot applesauce, divided (I recommend homemade)
2 1/2 cups whole wheat flour
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons ground cloves
2 teaspoons ground allspice
1 teaspoon nutmeg
1 cup chopped walnuts
1. Preheat oven to 350 degrees Fahrenheit. Grease and flour 2 cake pans (9"). Mix the shortening and the sugar together well, adding the sugar slowly. Add 1/2 cup applesauce and mix well again.
2. Combine the flour, salt, baking soda, cinnamon, cloves, allspice, and nutmeg, mixing well. Add flour mixture to the sugar mixture, along with the rest of the applesauce and the walnuts. Beat until the batter is very well blended.
3. Spread evenly in the pans. Bake for about 40 minutes (1 hour if using loaf pans). Test for doneness with toothpick in center. Let layers cool for 5 minutes, loaves cool for 10 minutes. Turn out on a rack.
I would suggest eating a slice of this for dessert, with some grapes, berries, or citrus fruit. nomnomnom
Source of recipe: Adapted from "Hot Applesauce Cake" in the Fannie Farmer Baking Book, which I borrowed from my mom. I made it sweet, healthy, and simple. Old-fashioned recipes are usually really dangerous to eat on a daily basis, and we can't have that! So I cut down the sugar considerably.
