Crazy Good Banana Muffins

What you need: 

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 bananas, mashed
3/4 cup white sugar
1/4 cup unsweetened apple sauce
3 tablespoons vegetable oil
1/2 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 375 degrees Fahrenheit. Line 10 muffin cups with muffin papers.
2. In a large bowl, mix together flour, baking soda, baking powder, and salt.
3. In another bowl, beat together bananas, sugar, applesauce and oil.
4. Stir the banana mixture into the flour mixture just until moistened. Stir in walnuts, if desired.
5. Spoon batter into prepared muffin cups. Bake in preheated oven for 18-23 minutes, or until a toothpick inserted into center of muffin comes out clean. Do not over bake.

SO HOW'D IT GO?

I made homemade applesauce by just blending some apples with a touch of water and stevia, and I substituted 1/4 brown sugar in place of some white sugar. There were AMAZING! Sometimes the recipes on this site just don't work out for me but these are a keeper. My whole family and boyfriend loved them, and they are always unsure of my vegan foods XD oh and I used coconut oil (melted in the microwave) for the oil.

Soooooooo good! Followed recipe exactly except I used raw cane sugar instead of white and sprinkled brown sugar on top like others suggested. The brown sugar gives it a nice crunch. Yum! Will definitely make again. (Note: white sugar is not vegan. Raw cane sugar replaces it easily. Use the same amount.)

I substituted chopped pecans and added brown sugar on top from someone's suggestion and these came out beautiful.  Very moist and filling.

OOOHHHH SOOOOO GOOOOOOD! The only change I made was to sprinkle brown sugar on the tops before baking...YUMMY and thank you for such a great recipe! :D

Made the following changes: used applesauce for all the oil; added 1 tsp cinnamon, 3/4 cup blueberries, 1/2 C oatmeal, 1/4 C non-dairy milk.  Could have used a little more mositure (another 1/4 C milk) and some vanilla.  They were a little dryer and plain than I wanted, but the texture was very good!  Slight "muffin crust" on the outside!  Yum :)

These are great!!! I don't really care for muffins but I had a bunch of bananas I needed to use and I loved these!!! I added chocolate chips to one batch and blueberries to another :D

i bake A LOT. i love the high banana to muffin ratio and the short ingredient list! the flavor is simple and let's the banana shine. the texture is nice. i stretched the batter to 15 muffins. they are being served to preschoolers and they just don't need a giant muffin. this recipe could totally be dressed up with a teaspoon of jam and crumb topping or keep it simple.

i made this as a bread instead of muffins and added blueberries!! super moist and yummy  ;)b also used 1/4 c honey instead of sugar.
the comforting feel of fresh out of the oven warm banana bread <333 thanks for the recipe!

ETA: With the raspberries, folded them into the batter just before doling it out to the cupcake papers, so they were pretty much whole.

...made a second batch, substituting about 1/4 - 1/2 cup of thawed frozen raspberries for one of the bananas. Turned out great! Thanks again for this recipe.
