Amazing Rosemary Bread

What you need: 

1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons vegan margarine, divided
1 teaspoon salt
2 1/2 cups flour, divided
2 tablespoons fresh rosemary, chopped, divided

What you do: 

1. Place yeast, sugar and water in large bowl or food processor and allow mixture to become bubbly. Mix in 1 tablespoon margarine, salt, and 2 cups flour.
2. Add one tablespoon of the fresh chopped rosemary. Knead for about 10 minutes by hand or in food processor about 5 minutes until smooth and elastic. Add more flour if necessary.
3. Oil a bowl, put dough in it and cover with a towel. Let dough rise in a warm place for one hour until doubled. Punch down dough and divide in half. Let dough rest about 5 minutes.
4. Shape the dough into 2 small rounded oval loaves. Sprinkle remaining 1 tablespoon rosemary over the loaves and press lightly into the surface. Let loaves rise again until doubled, about 45 minutes. Grease a baking pan or sheet, and preheat oven to 375 degrees F.
5. Bake for 15 to 20 minutes, until lightly browned. Carefully remove from oven, brush with remaining vegan margarine (and salt if desired).

SO HOW'D IT GO?

I recently discovered a whole bush of rosemary growing just outside my house, and this was the first recipe I thought of to use some of its bounty. I used extra virgin olive oil in lieu of margarine but otherwise followed the recipe exactly.

This bread is delicious!

do u think this can be done in a bread machine? my first try was handmade and turned out bad... any suggestions r welcome!

Made this tonight with a big pot of soup. Easy and wonderful! It was so yummy and I'm sure we'll make it again and again. 5 stars.

I've made this twice in the past few days, the second at my omnivorous bf's request. and he did not even know what rosemary was before I made it, hah. I have to fight to get a slice of the first loaf. today, he ate half of the second loaf in a chicken salad sandwich. definitely going into my recipe book!

I made this with regular margarine back when I was just vegetarian.  Since going vegan, I have missed this recipe.  I realized yesterday that one of the stores in my small city finally started stocking vegan margarine.  I can make this again!

wowee, this was one of the best non-breadmachine breads I have ever made.
I did it on Friday night for a big group, and everyone thought it was amazing, we were lucky enough to have a massive rosemary bush/tree outside, so picked some super-fresh, and I cracked a bit of rock salt over the top, honestly, it was just amazing.
Made it again to go with soup for Sunday night dinner, and I split one mixture into four individual loaves and we had one each with our vege soup..mmmm... I'm so going to get addicted to this bread. Meh, there are worse things.

I loved it! It was easy and yummy. I was thinking it would be really good with some Parmesan cheese and/or some olive oil too. I'm going to try it next with some Jalapeno peppers. I'm excited! I don't know what macaroni grill bread tastes like but I'm sure it's awesome like this one!

I wonder how this would taste with some raspberry juice mashed with a chipotle pepper, mixed in the dough.
