Vegetable Kurma

What you need: 

115 grams potatoes
115 grams carrots
60 grams French beans
80 grams green peas
100 grams cauliflower
1 and 1/2 coconut
80 grams onions
8 green chillies
15 grams ginger
15 grams garlic
30 grams shallots
5 grams chilly powder
5 grams turmeric powder
15 grams coriander powder
5 grams aniseed
10 grams tomatoes
1 sprig curry leaves
40 ml coconut oil
salt to taste

What you do: 

1) Wash & cut the vegetables.
2) Grind a fine paste of coconut, aniseed, cloves, cardamoms &cinnamon
3) Heat oil, add onions & green chillies. When the onions are brown add ginger-garlic paste, all vegetables, chilly powder, coriander powder &turmeric powder &stir fry.
4) Add water, salt and cook until all vegetables are cooked.
5) Add ground coconut paste and simmer for about a few minutes before serving.
