How are you currently eating said nuts, beans & tofu?
Have you tried Quinoa? I have been making that instead of rice lately and it is delish!

I pretty much add milled flax seed to everything. 2T has 3g of protein, which isn't much, but can add up over the course of a day.
Also, I just made a batch of the Larabar-esque recipe someone posted. Here's the link: http://bunnyfoot.blogspot.com/2006/02/homemade-lara-type-bars.html I know you said you were sick of nuts, but they are a good "treat" that have the added bonus of protein. And you can put whatever you want in them--I did a key lime thing with almonds, cashews, unsweetened coconut, and lime juice.
Have you considered soy protein powders? My BF used to make "smoothies" with peanut (or almond) butter, some milk, soy protein powder, and maybe a banana--makes for a good filling breakfast!

I just bought some light chocolate soy milk (8th Continent) and it was super delicious and always put me over the top for my protein count. I add vegetable protein powder to my morning smoothie and Boca crumbles to rice and beans. I also eat a handful of almonds every day, lots of rice and beans, nutritional yeast...sometimes I get 90 something grams of protein per 1500 calories!

You could try adding a little bit of nutritional yeast to alot of different grain based dishes to up the protien. If you like to bake try subbing some soy and spelt flour for white. I'm not sure that you really need more protien though, you may benefit from changing one of your cardio workouts to an additional weight lifting workout, or keep a combo workout of some sort. My gym has classes called boot camp & chisel that are both combos of cardio & weights.

I don't know if you care about this or not, but I believe that 8th Continent uses GMO Soy. Sorry for the bad news! :-\

TVP has 12 grams of protein for every 1/4 cup serving:

It's pretty easy (for me, anyway) to get about a cup down.
