Beet Hummus

What you need: 

4 medium beets, precooked and diced
1 lemon, zested and juiced (4" lemon zest)
3 tablespoons olive oil
1 teaspoon tahini
1/2 teaspoon cumin powder
2 cloves garlic
salt, to taste

What you do: 

1. Place all ingredients in the glass of an immersion blender and puree until smooth.
2. Check for salt. If it's too thick, you can add more lemon juice or a couple tablespoons water.
3. Chill well.

SO HOW'D IT GO?

This is the BEST! I am a convert, and I will be making this often. Beautiful, nutritious, and soooo delicious. Five stars, for sure! My only regret is that I didn't take a picture.

I make Greek beets with similar ingredients (except for the cumin and tahini) in big batches. Then when I get a little tired of the beet chunks I make a puree to dip stuff in. I'd love to try this with the cumin and tahini. Marj, spread this on a whole wheat wrap and fill it with veggies like sprouts, cucumber, maybe some grilled eggplant or seitan. But scooping with your fingers is always delicious! Good idea, Yabbitgirl.

This sound interesting. I'm always wanting to try beets and we love hummus :)  What do you dip in this?
